  • 6 tartlet cases
  • 80grams dark chocolate
  • 1 egg white
  • 1/4 cup caster sugar

Method

Step 1 of 4

Preheat oven to 200°C. Remove tarlet cases from pack and arrange on a baking tray.

Step 2 of 4

Roughly chop dark chocolate. Heat thickened cream in a small saucepan over medium heat or microwave on high for 20 seconds or until hot. Add chocolate and stir until melted and smooth.

Step 3 of 4

Fill tarts with chocolate mixture and set aside to cool. Beat 1 egg white with a pinch of salt in a small bowl with an electric beater until soft peaks from. Add 1/4 cup caster sugar, a little at a time, beating well after each addition until thick and glossy.

Step 4 of 4

Spoon or pipe meringue onto tartlets to cover filling. Bake for 4 minutes or until light golden. Serve warm or cold.
