Method
Step 1 of 6
Preheat oven to 180ºC/160ºC fan forced. Grease and line base and sides of three 17cm round cake pans with baking paper.
Step 2 of 6
Make cake mix according to packet instructions using eggs, vegetable oil and water; evenly divide mixture into prepared pans. Bake for 30-40 minutes or until tested with a skewer. Cool cakes on a cooling tray.
Step 3 of 6
Once cooled, using an 8cm round cutter, carefully cut a round hole from the centre of two of the cakes. This will be your base and middle cakes. Place base cake on a serving tray.
Step 4 of 6
Spread one sachet of frosting over top of base cake (not covering the hole). Place middle layer cake on top and again repeat icing process with remaining sachet of frosting. Fill the hole with mini smarties and place the final cake layer on top.
Step 5 of 6
To make choc icing: combine dark melts and cream in heatproof bowl; microwave, uncovered for 1 minute; stir; repeat in 30 second intervals until melted. Set aside until cool and spreadable. Smooth choc icing on top and around sides of cake.
Step 6 of 6
In a large bowl combine sweetened condensed milk and green food colouring; carefully spoon over the top of the cake to create a goo icing. Serve.
