Easy Choc-Crunch Cake

Buttercream
- 1/3 cup thickened cream
- 200grams pkt dark chocolate, chopped
- 400grams unsalted butter, softened
- 2 cups icing sugar mixture
- 2tablespoons cocoa powder
- 8 50g Cadbury Crunchie chocolate bars
Ganache glaze
- 200grams pkt dark chocolate, chopped, extra
- 200milliliter double cream
- 2tablespoons unsalted butter
- 2packets 540g Betty Crocker Chocolate Fudge Cake Mixes
Description
This simple chocolate cake recipe with layers of buttercream on the inside and crushed Cadbury Crunchie bars on the outside will satisfy any sweet tooth.
Method
Step 1 of 6
Preheat over to 180°C/160°C fan-forced. Grease 2 x 20cm round cake pans. Prepare cake mixes according to packet directions. Divide between pans and bake until cooked when tested with a skewer. Cool.

Meanwhile, prepare buttercream: heat cream and chocolate in a saucepan over medium heat until melted and smooth.

Beat butter until pale and creamy. Sift icing sugar and cocoa together in a bowl. Gradually add icing sugar mixture until thick.

To prepare glaze, place chocolate and cream in a heatproof bowl. Sit on top of a saucepan of simmering water and stir until smooth and glossy. Add butter and stir until smooth. Remove from heat and leave to cool, stirring occasionally, until slightly thickened.

Turn cakes out onto a wire rack. Trim tops. Cut each cake in half horizontally. Spread tops of 3 cakes with a little buttercream and layer on top of each other. Finish with remaining layer. Cover tops and sides of cake with buttercream.
Step 6 of 6
Crush chocolate bars and press over top and sides of cake. Drizzle with glaze. Slice and serve.
