- 276grams plain flour (save 20g for later)
- 3/4 cup icing sugar, sifted
- 250grams unsalted butter, chopped (save 50g for later, melted)
- 1/2 cup shredded coconut
- 1/4 cup pure cream
- 2tablespoons golden syrup
- 440grams can pineapple pieces in natural juice, drained
- 2 eggs, lightly whisked
- 1/3 cup brown sugar
- 1 cup macadamias, chopped

Method
Step 1 of 3
Preheat oven to 180°C. Grease an 18x27cm slice tray and line with baking paper.
Step 2 of 3
Process flour, icing sugar and butter in a food processor until it comes together to form a dough. Press evenly into base of tray. Bake for 15 minutes or until pale golden. Cool in tray for 10 minutes.
Step 3 of 3
Combine brown sugar, extra flour and butter, cream and golden syrup in a bowl. Add egg and stir to combine. Add pineapple, macadamia and half of the coconut. Spread over base. Sprinkle with remaining coconut. Bake for 25 minutes or until golden. Cool in tray. Cut into fingers to serve.
