- 1 1/2 cup plain flour, sifted
- 1/4 cup milk
- 180grams butter, softened
- 2teaspoons vanilla extract
- 125grams glacé ginger, finely chopped
- 3teaspoons ground ginger
- 4 plums, halved, stones removed
- 1 egg
- 1 cup caster sugar
- 3/4 cup almond meal

Method
Step 1 of 3
Preheat oven to 190°C. Grease a 20x30cm slice pan and line with baking paper.
Step 2 of 3
Beat butter, caster sugar and vanilla using electric beaters until thick and pale. Beat in egg. Beat in flour alternately with milk. Stir in almond meal, ground ginger and glacé ginger until just combined. Spread mixture into pan. Smooth top.
Step 3 of 3
Cut each plum half into 4 wedges. Arrange wedges in rows over ginger mixture. Bake for 35 minutes or until golden and a skewer inserted in centre comes out clean. Cool in the pan. Pack in an airtight container and slice when ready to serve (see tip).
