9 Ingredients

  • 1 cup plain flour
  • 125grams butter
  • 100grams chocolate, melted (for toppings)
  • 1teaspoons ground cinnamon (for toppings)
  • 1/2 cup honey (for toppings)
  • 1/3 cup pistachio kernels, finely chopped (for toppings)
  • 1L vegetable oil (for deep frying)
  • 4 eggs
  • 100grams caster sugar (save 60g caster sugar)

Method

Step 1 of 4

Place butter, sugar, 1 cup water and 1/4 tsp salt into a saucepan over medium-high heat. Stir until butter has melted and mixture comes to the boil. Reduce heat to medium. Add flour and stir quickly until well combined. Continue stirring for 1 minute or until dough pulls away from the side of the pan. Cool for 5 minutes.

Step 2 of 4

Place dough into the bowl of a mixer. Add eggs, 1 at a time, beating well after each addition. The mixture should be smooth and glossy. Cover bowl and chill for at least 1 hour or preferably overnight.

Step 3 of 4

Half fill a medium saucepan with oil. Place over medium heat. When hot use a small ice-cream scoop to drop dollops of batter, 4 at a time, into oil. Cook each batch, turning often, for 8 minutes until golden. Remove with a slotted spoon to a tray lined with paper towel.

Step 4 of 4

Combine sugar and cinnamon in a bowl. Place nuts in a bowl, and melted chocolate in a third bowl. Thread puffs onto skewers while hot and coat with cinnamon sugar, honey and nuts or melted chocolate. Serve immediately.
