  • 2/3 cup plain flour
  • 1/3 cup thickened cream (to serve)
  • 200grams butter, chopped
  • 40grams chocolate melts
  • 200grams dark cooking chocolate
  • 1tablespoons cocoa
  • 4teaspoons raspberry jam
  • 4 eggs
  • 2/3 cup caster sugar

Method

Step 1 of 5

Preheat oven to 180°C. Grease 4 x 1 cup ramekins and place on a baking tray.

Break the chocolate into pieces and place in a heatproof bowl. Sit the bowl over a saucepan of barely simmering water, making sure the bowl doesn't touch the water. Stir chocolate until smooth. Remove bowl. Cool slightly.

Using electric beaters, beat butter and sugar together until pale and creamy. Add eggs, one at a time, beating well after each addition. Add the melted chocolate, flour and cocoa. Using a large spoon, fold together gently to combine.

Place a large spoonful of the mixture into 1 ramekin to cover the base. Make a well in the centre and fill with 1 tsp of jam. Top with 1/4 of the chocolate melts. Cover with another large spoonful of pudding mixture. Repeat the process with the remaining 3 ramekins, pudding mixture, jam and chocolate melts.

Transfer baking tray to oven and bake for 25 minutes or until tops have set. Remove from oven and allow to cool for 5 minutes. Loosen edge with a knife and turn out onto serving plates. Add a dollop of cream and dust with cocoa. Serve.
