  • 2 cup cornflakes (roughly crushed)
  • 1/4 cup margarine (melted)
  • 80grams dried apricots (chopped)
  • 1 carrot (grated)
  • 1 pinch nutmeg
  • 2teaspoons pure honey
  • 1/2 orange zest
  • 1/4 cup rolled oats
  • 2tablespoons yoghurt

Description

This easy to make cornflake cookie recipe pairs crunchy cereal with oats carrot and orange for a perfect flavour combination. Serve for morning or afternoon tea.

Method

Step 1 of 3

Preheat oven to 180°C. Line two trays with baking paper.

Step 2 of 3

Combine carrot, apricots, orange zest, flour, oats, margarine, yoghurt, honey and nutmeg in a large bowl. Add crushed cornflakes and stir to combine.

Step 3 of 3

Shape into rough balls, place on tray and bake for 15 minutes or until golden. Cool on trays.
