  • 1/2 cup honey
  • 225grams butter
  • 1 egg yolk
  • 3 cup plain flour
  • 1/2teaspoons ground nutmeg
  • 1/4teaspoons ground cinnamon
  • 1/4teaspoons salt

Description

Quick and easy cookies that the kids will enjoy as a treat after school or in their lunchboxes or something nice to enjoy with a cuppa.

Method

Step 1 of 9

Preheat the oven to 180C FF. Line a baking tray with baking paper and set it aside.

Step 2 of 9

Put the castor sugar and butter and in a mixer or food processor and beat until light and fluffy.

Step 3 of 9

Add the egg yolk and mix it through the sugar and butter.

Step 4 of 9

Drizzle the honey into the mixture.

Step 5 of 9

Add the flour, spices and salt and continue to mix the ingredients into a loose dough.

Turn the dough out onto a sheet of plastic wrap. If it seems a little crumbly massage it with your hands to form a smooth dough.

I divide the dough into quarters, it makes it easier to roll out. Roll the dough to about 1/8 inch (3mm) thickness then use a biscuit cutter to make shapes or just use a glass to make round biscuits.

Put the biscuits on the baking tray and bake for about 10 minutes (golden brown). Let them cool and enjoy with a cuppa.

I used Capilano Choc Honey spread for the thumbprint biscuits. It sets in the fridge and it is a delicious and versatile addition for baking.
