  • 80grams desiccated coconut
  • 2 over ripe bananas
  • 2tablespoons cinnamon (to taste)
  • 1teaspoons honey
  • 2 1/2 cup rolled oats

  • 60grams sultanas
  • 1teaspoons virgin coconut oil

Method

Step 1 of 7

Mash the bananas and cream cheese, then fold in the honey and virgin coconut oil until it's combined. Taste the mixture to see if it is sweet enough, if not add a little bit more honey.

Stir in the sultanas, oats and half of the desiccated coconut.

Step 3 of 7

Mix until the wet and dry mixtures are completely combined. You can then either press it in to a brownie pan or slice tray till it’s the desired thickness and sprinkle with the remaining coconut. Alternatively, roll them into balls (a generous teaspoon size) and then roll them in the remaining desiccated coconut.

Put the mixture in either the fridge or freezer to firm up. The freezer will be faster to set but ensure it doesn't freeze!

Once firm and set, slice in to bite size slices.

Pop in a zip lock bag or an airtight plastic container to store.

To extend their shelf life you can put them in the freezer.
