- 1 1/2 cup self raising flour
- 125grams butter, softened
- 3 crunchie bars, roughly chopped (50g each)
- 1teaspoons vanilla
- 1L vanilla ice cream, slightly softened
- 1 egg
- 1/2 cup brown sugar
- 1/3 cup caster sugar
- 3/4 cup milk chocolate baking chips
- 220grams milk baking chocolate , melted (for drizzling)

Method
Step 1 of 5
COMBINE the ice cream and Crunchie and then chill until firm.
Step 2 of 5
CREAM together butter and sugars until light and fluffy. Whisk in egg and vanilla. Stir in sifted flours and the chocolate.

ROLL a tablespoonful of mixture into a ball and place on a greased baking tray, pressing down slightly. Repeat with remaining mixture, allowing room for spreading.
Step 4 of 5
BAKE in a moderate oven 180oC for 15 minutes or until cooked. Cool on a wire rack. Store in an airtight container until required.
Step 5 of 5
TOP a cookie with a scoop of ice cream, then sandwich together. Repeat with remaining cookies and ice cream. Place onto serving plates and drizzle with melted chocolate. Serve immediately
