  • 3/4 cup self raising flour
  • 3/4 cup margarine (save 1/4 cup for icing)
  • 1tablespoons milk
  • 1/2 cup dessicated coconut
  • 1 1/2 cup icing sugar, sifted
  • 12 milk chocolate melts
  • 2 1/2tablespoons cocoa powder
  • 12 jelly beans
  • 12 jubes
  • 2 eggs, lightly beaten
  • 1/2 cup caster sugar
  • 1/4 cup white chocolate melts, melted

Festive chocolate cupcakes with coconut & white chocolate icing

Step 1 of 5

Preheat oven to 180°C (160°C fan-forced). Line 12-hole, 1/3 cup capacity muffin pan with paper cases.

Using an electric mixer beat butter and sugar in a large bowl until pale and creamy. Add eggs, one at a time, beating until combined. Add flour, cocoa and water and stir until just combined. Spoon mixture evenly among the lined pans. Bake for 15-20 minutes until a skewer inserted at centre comes out clean. Transfer to a wire rack to cool.

Meanwhile place the butter for the icing in a large bowl. Using an electric mixer beat until pale and creamy. Gradually beat in sifted icing sugar until combined. Add milk and melted chocolate, beat until combined.

Spread icing over cooled cupcakes. Sprinkle with coconut. Decorate as a snowman face by pressing chocolate melt in the top part of cupcake to create the hat and then place some choc chips in front to create the hat rim. Use remaining choc chips to create the snowman’s eyes and a jelly bean or smartie for the nose and a jube to create the mouth.
