  • 75grams dried ginger pieces, finely diced
  • 4teaspoons ginger, powder
  • 2teaspoons allspice, powder
  • 150grams molasses
  • 100grams brown sugar
  • 100grams butter, unsalted (extra for baking tin)
  • 2 eggs (medium)
  • 1/2teaspoons salt
  • 100grams gingerbread, broken
  • 80grams whipped cream
  • 175grams self raising flour

Description

A delicious cake with the warm spice of ginger and the crunch of the cookie crumb.

Method

Step 1 of 4

Pre-heat the oven to 180°C/160°C fan-forced. In a mixing bowl, combine the butter with the sugar and molasses for 3 minutes until its smooth.

Step 2 of 4

Add the eggs and combine fully for another minute. Add the dried ginger and spices and incremently add the flour while mixing.

Step 3 of 4

Lightly butter a baking tin and empty the contents. Bake for 50 minutes or until cooked fully through.

Step 4 of 4

All to cool slightly before serving with broken gingerbread cookies and whipped cream.
