  • 2teaspoons baking powder
  • 2 1/3 cup plain flour
  • 200grams unsalted butter, chopped
  • 1tablespoons vanilla extract
  • 2tablespoons sour cream
  • 1 free range egg
  • 1/2 cup caster sugar
  • 2tablespoons icing sugar, to dust
  • 8 Royal Gala apples, quartered and sliced crossways
  • 1tablespoons ground cinnamon
  • 1 cup firmly packed brown sugar

Method

Step 1 of 6

Beat butter and caster sugar in a stand mixer until pale and creamy. Add egg, sour cream and vanilla, and beat to combine. Sift in flour and baking powder, and beat on low speed until just combined. Transfer to a lightly floured surface and shape into a flat disc. Cut one-third of the pastry from disc. Wrap both pieces in plastic wrap and chill for 30 minutes.

Meanwhile, combine apple, brown sugar and cinnamon in a bowl and set aside.

Preheat oven to 200°C. Grease a 23cm springform cake pan and unlatch and separate base and ring.

Roll larger pastry piece between 2 sheets of baking paper until 4mm thick. Remove top sheet of paper and lay pastry on bottom sheet over cake pan base, pressing gently. Using edge of pan base as a guide, trim excess pastry. Position ring onto base and secure latch. Trim excess paper. Use leftover pastry to line side of pan up to the rim (the pastry will be quite soft), using your fingertips to press into place and seal join. Transfer to a baking tray.

Strain syrup from apple mixture and reserve. Fill pastry case with apple, then roughly crumble reserved pastry on top. Spoon reserved syrup over crumbled pastry. Bake for 1 hour 15 minutes, checking after 30 minutes and covering with foil if it becomes too dark, or until pie is golden and coming away from the side of pan.

Step 6 of 6

Stand pie for 20 minutes. Chill for at least 1 hour to firm up. Transfer to a serving plate and dust with icing sugar. Cut into wedges and serve.
