  • 4 eggs, room temp
  • 2 cups milk, room temp
  • 1/2 cups plain flour, sifted
  • 3/4 cup castor sugar
  • 1 cup desiccated coconut
  • 90grams unsalted butter, very soft
  • 1teaspoons vanilla essence
  • 125grams fresh blueberries, washed and patted dry
  • 50grams icing mixture (for dusting)

Description

It's blueberry season, why not use this fantastic fruit to bake a delicious pie, with a coconut/blueberry top, and with a divine custard filling.

Method

Step 1 of 6

Lightly grease a 26 cm round pie dish with butter. Preheat oven to 180 degrees (160 fan forced)

Step 2 of 6

Into a large bowl, add all ingredients except the blueberries. With a beater, beat for about 2 minutes until well combined.

Step 3 of 6

Pour mixture into prepared pie dish. With a little extra plain flour, dust the blueberries lightly, removing any excess. This will prevent them sinking to the bottom. Dot the blueberries over the top of the pie.

Step 4 of 6

Gently place in preheated oven (it is normal for the mixture to be quite liquid at this point). Bake for 45 minutes or until centre is set. You can also test with a clean skewer.

Remove from oven and place on a wire rack to cool completely, then into the fridge to chill.

Step 6 of 6

Optional: Serve with freshly whipped cream or ice cream, dust with icing mixture and add more blueberries on the side.
