  • 2 cup plain flour
  • 4tablespoons thickened cream (to serve)
  • 185grams butter
  • 125grams blueberries
  • 1/2teaspoons ground cinnamon
  • 1tablespoons lemon juice
  • 385grams can apple, sliced
  • 2 eggs, 1 egg yolk, 1 egg lightly beaten
  • 1/4 cup caster sugar; plus 1 tbs caster sugar & extra caster sugar

Method

Step 1 of 5

Process flour and sugar in a food processor until combined. Add butter and process until mixture resembles fine breadcrumbs. Add egg yolk, lemon juice and water and process until dough just comes together. Turn out onto a lightly floured surface. Knead gently until smooth. Shape into a disc and wrap in plastic. Chill for 30 minutes.

Meanwhile, preheat oven to 180°C. Combine the apple, blueberries, caster sugar and cinnamon in a large bowl.

Roll out the pastry on a lightly floured surface until 3mm thick. Cut out rounds using a 13cm diameter saucer, re-rolling scraps, to make 8 pastry rounds.

Divide apple and blueberry filling between centres of pastry rounds. Paint pastry edge with whole egg that has been lightly beaten before folding over and pressing edges together well to seal.

Step 5 of 5

Place turnovers onto a paper-lined tray. Brush tops with egg and sprinkle with extra sugar. Pierce pastry with a fork to allow steam to escape. Bake for 12 to 15 minutes or until golden. Serve turnovers warm with thick cream.
