  • 1teaspoons vanilla essence
  • 2 cup self raising flour, sifted
  • 1/2 cup milk
  • 1/2 cup fresh strawberries, mashed
  • 3 medium strawberries, mashed (for icing)
  • 1 1/2 cup icing sugar (for icing)

A cake which showcases strawberries.

Method

Step 1 of 6

Preheat oven to 180C. Lightly grease and line a 20cm cake tin and set aside.

Step 2 of 6

Beat together the butter and sugar until it is light and fluffy.

Step 3 of 6

Add the eggs and vanilla essence and beat until mixture is smooth.

Step 4 of 6

Fold in the flour and milk, mixing well.

Step 5 of 6

Add the strawberries to the mixture and fold together. Spoon mixture into the cake tin and bake for about 40-45 minutes. Once cake is cooked let it stand on a wire rack to completely cool down.

Step 6 of 6

Strawberry Icing: Combine icing sugar and strawberries, mix until well combined. Spread onto the cooled cake and serve.
