To make strawberry cream
- 3 strawberries, hulled
- 200grams mascarpone
- 4tablespoons icing sugar, sifted
- 250grams self raising flour
- 125grams unsalted butter
- 185grams caster sugar
- 2 eggs, beaten
- 1teaspoons vanilla essence
- 100milliliter milk

Method
Step 1 of 6
Heat the oven to 180 degrees.
Line a 12 hole cupcake tin with patty pan cases.
Gather ingredients.
Sift the flour into a large mixing bowl.
Add the soft butter, sugar, vanilla essence and eggs and beat with an electric beater on a low speed for 2 minutes, or until combined.

Spoon the mixture evenly into the cupcake cases and bake for 15 - 20 minutes or until golden and firm to touch.

Remove from oven and cool.
Step 4 of 6
While they are cooling, make the strawberry cream mixture. Mash the strawberries in a bowl with a fork, add the mascarpone and sifted icing sugar to bowl.

Beat with a wooden spoon until combined.
Chill the mixture for 30 minutes.
Step 6 of 6
To serve, slice the top of each cake, then cut each one in half ( to make wings )
Spoon a tablespoon of strawberry cream mixture onto top of each cake and press in wings.
Dust with icing sugar to serve.
