To make strawberry cream
  • 3 strawberries, hulled
  • 200grams mascarpone
  • 4tablespoons icing sugar, sifted
  • 250grams self raising flour
  • 125grams unsalted butter
  • 185grams caster sugar
  • 2 eggs, beaten
  • 1teaspoons vanilla essence
  • 100milliliter milk

Method

Step 1 of 6

Heat the oven to 180 degrees. Line a 12 hole cupcake tin with patty pan cases. Gather ingredients. Sift the flour into a large mixing bowl. Add the soft butter, sugar, vanilla essence and eggs and beat with an electric beater on a low speed for 2 minutes, or until combined.

Step 2 of 6

Spoon the mixture evenly into the cupcake cases and bake for 15 - 20 minutes or until golden and firm to touch.

Remove from oven and cool.

Step 4 of 6

While they are cooling, make the strawberry cream mixture. Mash the strawberries in a bowl with a fork, add the mascarpone and sifted icing sugar to bowl.

Beat with a wooden spoon until combined. Chill the mixture for 30 minutes.

Step 6 of 6

To serve, slice the top of each cake, then cut each one in half ( to make wings ) Spoon a tablespoon of strawberry cream mixture onto top of each cake and press in wings. Dust with icing sugar to serve.
