  • 1/2 cup custard powder
  • 80grams butter
  • 2/3 cup icing sugar mixture
  • 2tablespoons passion fruit pulp

Beautifully melt in your mouth moments.
Instruction tip
The custard powder gives these a lovely flavour. Different to the usual cornflour that's usually used.

Method

Step 1 of 8

Preheat oven to 160°C. Grease and line 2 baking trays.

Step 2 of 8

Cream first lot of butter, essence and icing sugar until pale in colour.

Step 3 of 8

Sift together the flour and custard powder and stir into the butter mixture in two lots.

Step 4 of 8

With lightly floured hands, roll mixture into small balls and place about 3 cm apart on trays.

Step 5 of 8

Flatten balls slightly with a floured fork.

Step 6 of 8

Bake for about 15 minutes or until biscuits are a pale straw colour. Stand, cool.

Step 7 of 8

Make the buttercream filling. Cream together the remaining butter and icing sugar until pale in colour. Add in the passionfruit pulp.

Step 8 of 8

Sandwich the biscuits together with the butter cream filling. Dust with icing sugar.
