Instruction tip
For extra flavour, spread 1/2 cup warm jam over base before topping with meringue.

Method

Step 1 of 5

Preheat oven to 180°C and grease a 18x28cm shallow square tin.

Step 2 of 5

Cream butter and 1/2 cup sugar until light and fluffy. Beat in eggs yolks and mix well.

Step 3 of 5

Mix in flour. Spread over base of pre-prepared tin using lightly floured fingertips.

Step 4 of 5

Beat eggs whites until stiff peaks form. Gradually add remaining sugar. Beat until thick and glossy. Fold in coconut using a metal spoon.

Step 5 of 5

Spread over base. Bake for 25-30 minutes or until cooked when tested with a skewer. Cool before cutting into squares to serve.
