Base
  • 125grams unsalted butter, melted
  • 1/2 cup sugar
  • 1 cup self raising flour, sifted
  • 1 egg, lightly beaten
  • 1 cup desiccated coconut
  • 1teaspoons vanilla
  • 1/2teaspoons salt
Topping
  • 395grams condensed milk
  • 1tablespoons golden syrup
  • 1tablespoons unsalted butter
  • 100grams crushed nuts (optional)

Just a delicious slice, try stopping at just one piece!

Method

Step 1 of 6

Base: Preheat Oven to 180 degrees (160 fan forced). Grease and line (with over hang on the sides for ease of lifting out) a slice tray.

Step 2 of 6

Into a large bowl, add dry ingredients and mix to combine. Pour over combined cooled butter, egg and vanilla. Stir to combine.

Step 3 of 6

Press into slice tray and bake for about 20 minutes or until lightly golden.

Step 4 of 6

Topping: Whilst Base is baking. Add topping ingredients into a medium saucepan on low heat, stir to combine then keep stirring until butter has melted and the mixture is well combined and hot. This should take about 4-5 minutes.

Step 5 of 6

Remove base from oven, pour over butterscotch from saucepan, return to oven and bake a further 10-15 minutes or until lightly golden and bubbly. Remove from oven. Top with granulated nuts (optional).

Set aside to cool completely before slicing. Enjoy.
