Chocolate Peppermint Slice

Base
- 125grams unsalted butter, melted
- 1/2 cup sugar
- 1 cup plain flour , sifted
- 1 egg, lightly beaten
- 1 cup coconut
- 1teaspoons vanilla
- 3tablespoons cocoa, sifted
Filling
- 3 cups pure icing sugar, sifted (not icing Mixture)
- 50grams Copha, melted
- 1/3 cup milk (room temp)
Topping
- 200grams dark chocolate
- 1 1/2tablespoons vegetable oil
- 1/2-1teaspoons Peppermint Essence - depending on your taste buds

Rich, decadent and delicious, that's how I describe this slice.
Method
Step 1 of 8
Gather all ingredients together - preheat oven to 160 degrees Fan - grease and line (with overhang) a slice tray.

BASE DIRECTIONS - Into a small bowl add butter. Melt in microwave until just melted. Or can do on the stove top. When cool, add egg and vanilla, mix well and set aside.

Into a large bowl add dry ingredients. Mix well. Pour in wet ingredients. Mix well to combine.

Press mixture into prepared slice tray. Bake for 20 minutes or until a skewer comes out clean. Cool completely in tray.

FILLING DIRECTIONS - Sift pure icing sugar (not icing mixture) into a large bowl. Add copha and essence. Then add milk gradually until you reach a thickish consistency (may not need all of the milk). Spoon over cooled base in slice tray, reaching all corners. Chill in fridge whilst the topping is being prepared.

TOPPING DIRECTIONS - Place in a small bowl over simmering water (ensuring bowl is not touching the water) the topping Ingredients. Stir until chocolate has just melted and is nice and smooth. Cool slightly. Then pour over filling. Again reaching all the corners. Place back into the fridge for about 4 hours to allow the slice to set.

Now the tricky part - slicing - remove from fridge and let the slice sit for about 20 minutes, leave in tray. Heat a sharp knife under hot water, dry and start slicing to whatever size slice you desire. You may get some cracking, but that's unavoidable, it still tastes the same! DELICIOUS

This decadent slice is best stored in the fridge. Just remove for a few minutes prior to serving and enjoy!!
