- 2tablespoons cornflour
- 75grams unsalted butter, melted
- 1tablespoons gelatine powder
- 300milliliter pure cream
- 250grams spreadable cream cheese, at room temperature
- 1/3 cup cocoa powder (use 1/4 cup for recipe and remainder to dust)
- 250grams plain chocolate biscuits
- 3 eggs
- 1/3 cup caster sugar

Method
Step 1 of 5
Preheat oven to 180°C. Grease a 22x31cm slice tray and line with baking paper. Break biscuits into a food processor and process until fine crumbs form. Add butter and process until combined. Press mixture into base of tray. Bake for 10 minutes. Set aside to cool completely.
Step 2 of 5
Heat cream in a small saucepan until bubbles appear around the side of the pan. Remove from heat and set aside.
Step 3 of 5
Separate 2 of the eggs. Place 2 egg yolks, reserving whites, and 1 egg in a food processor with sugar, cornflour and cocoa. Process until smooth and creamy. With motor running, gradually add warm cream. Return mixture to saucepan and stir over low heat for 5 minutes until it thickens like custard. Cover surface with plastic and cool for 10 minutes. Whisk in cream cheese.
Step 4 of 5
Dissolve gelatine in 2 tbs boiling water. Stir into custard. Whisk egg whites until stiff peaks form, then fold into custard mixture. Pour over base and chill for 3 hours or until set.
Step 5 of 5
Lift slice out of tray and dust with extra cocoa (see tip, below). Cut into squares.
