Method

Step 1 of 5

Preheat oven to 180°C/160°C fan-forced. Line 2 large baking trays with baking paper.

Step 2 of 5

Place cocoa in a small bowl. Add 1/2 cup boiling water and stir until cocoa dissolves. Set aside to cool.

Step 3 of 5

Meanwhile, using an electric mixer, beat butter and sugar for 5 minutes or until light and fluffy. Sift over flour and baking powder. Add coconut and fold until just combined. Add cocoa mixture and fold until combined. Stand for 5 minutes.

Step 4 of 5

Gently roll level tablespoons of the mixture into balls, then place on trays, leaving room for spreading. Lightly press each ball with a fork to flatten slightly. Bake for 20 minutes or until lightly browned. Stand on trays for 10 minutes, then transfer to a wire rack to cool completely.

Step 5 of 5

Spread a little chocolate on flat side of half the biscuits. Sandwich with remaining biscuits, flat-sides facing in. Drizzle remaining chocolate over biscuit tops. Set aside for 30 minutes or until chocolate has set. Serve.
