Description

If you love coconut, then give these biscuits a try. It’s a quick and easy recipe that uses ingredients you may already have in your pantry.

Method

Step 1 of 5

Gather all ingredients together. Preheat oven to 170 degrees Fan. Line 2 baking trays with baking paper.

Step 2 of 5

Into a large bowl, add sifted flours, sugar and coconut, mix well to combine. Make a well in the centre, add in cooled melted butter, egg and vanilla. Mix well again until incorporated.

Step 3 of 5

Roll a teaspoon of mixture in your hands and place on prepared trays, allowing for the mixture to spread, flatten tops slightly with a fork. This mixture should make 32 bikkies.

Step 4 of 5

Bake for 15 minutes or until lightly golden on top (each oven is different) remove and cool on trays for about 5 minutes, then move to a wire rack to cool completely.

Store in an airtight container and enjoy with a refreshing cup of tea.
