  • 2 1/2 cup self-raising flour
  • 1/4 cup milk
  • 125grams butter, at room temperature
  • 2teaspoons vanilla extract
  • 250grams sour cream
  • 2 passionfruit, pulp removed
  • 1/4teaspoons baking soda
  • 2 eggs
  • 3/4 cup caster sugar
  • 1 cup caster sugar (extra)

Method

Step 1 of 6

Preheat oven to 180°C. Grease and line a 25x12x6cm loaf pan with baking paper.

Beat butter, sugar and vanilla together until pale and creamy. Add eggs one at a time, beating well after each addition. Using a large metal spoon, gently fold sour cream, milk and banana into batter. Sift flour and baking soda over mixture and gently stir until well combined.

Step 3 of 6

Spoon batter into prepared pan and smooth top with the back of spoon. Bake for 50 minutes or until a skewer inserted into the centre of the cake comes out clean.

Stand for 5 minutes before turning out onto a wire rack to cool.

Combine extra sugar, passionfruit pulp and water in a small saucepan. Stir until sugar dissolves and mixture comes to the boil. Simmer for 2 minutes. Remove from heat, transfer to a jug and cool.

Place loaf onto a serving plate. Drizzle cold syrup over. Serve.
