  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2teaspoons salt
  • 60grams butter, melted
  • 60grams peanut butter
  • 1 large egg
  • 1teaspoons vanilla essence
  • 1 1/4 cup flour, sifted
  • 1/2teaspoons baking powder
  • 1/2 cup chocolate chips

Description

Very easy to make and very moreish.
Instruction tip
Swap peanut butter for any nut butter.

Method

Step 1 of 8

Whisk sugars, salt, butter and peanut butter together to form a smooth paste.

Step 2 of 8

Add flour, baking powder and choc chips and fold in with a wooden spoon until a dough forms. It will be quite firm and should come together to be a dark golden brown.

Step 3 of 8

Preheat oven to 180°C.

Add egg and vanilla essence and whisk to smooth.

Step 5 of 8

Cover the bowl with cling film and chill the cookie dough in fridge for at least 30 minutes (even overnight).

Step 6 of 8

Scoop dough into 12 large (or 24 smaller balls) and place on baking paper. Flatten tops (note that due to the peanut butter these will not spread but rather will hold their shape).

Step 7 of 8

Bake for 12 minutes, until the cookies start to brown on the edges.

Cool cookies on a wire rack for 10 minutes before tucking in.
