BASE INGREDIENTS
  • 125grams unsalted butter, melted
  • 1/2 cup sugar
  • 1 cup SR flour, sifted
  • 1 egg, lightly beaten
  • 1 cup desiccated coconut
  • 1teaspoons vanilla essence
FILLING INGREDIENTS
  • 1 tin condensed milk
  • 80grams unsalted butter, room temp
  • 2/3 cup dark brown sugar, firmly packed
  • 150grams cream cheese, room temp
  • 2/3 cup raw chopped macadamia nuts

Description

Rich and decadent. A small slice is all you need.

Can decorate the top with more nuts or shredded coconut if desired.

Method

Step 1 of 9

Gather all ingredients together. Preheat oven to 160°C Fan. Grease and line a slice tray, with overhang.

Step 2 of 9

Base directions. Into a large bowl, add dry ingredients. Mix to combine. Set aside. Into a small bowl, add butter. Melt in microwave until just melted. When cool enough, add beaten egg and vanilla, mix well. Add wet ingredients to dry ingredients and mix well to combine. Press into prepared slice tray and smooth the top.

Bake for 15-20 minutes or until a skewer comes out clean as each oven is different. Cool completely in tray.

Filling Directions. Into a medium size, heavy based saucepan on low, add condensed milk, butter and dark brown sugar. Stir to combine.

Once Butter has melted, increase heat to medium. Cook stirring constantly for about 10-12 minutes or until caramel has thickened.

Remove from heat, cool slightly. Add Cream Cheese. Stir until well incorporated and the cheese has melted completely.

Add chopped macadamia nuts to the top of cooled base.

Pour or spoon the caramel mixture over the nuts, ensuring it gets into all the corners and covers all the nuts. But it's definitely okay if some nuts can be seen through the caramel.

Step 9 of 9

Set in the fridge for about 4 hours. It's a very rich slice. So I suggest cutting into small slices and is best kept in the fridge. Just remove 5-10 minutes before serving. Enjoy.
