Base
  • 125grams unsalted butter, melted
  • 1/2 cup dedicated coconut
  • 1/2 cup brown sugar
  • 1 cup plain flour
Filling
  • 125grams unsalted butter chopped
  • 395grams sweetened condensed milk
  • 1/2 cup brown sugar
Top
  • 200grams caramilk chocolate
  • 1tablespoons vegetable oil

Caramel slice with a twist for those caramilk lovers!
Instruction tip
I like my pieces bite size so cut it fairly small!

Method

Step 1 of 9

Preheat fan forced oven to 160 degrees. Line a slice tray with baking paper (overhang to get out easy)

Step 2 of 9

Mix all the base ingredients together & put into tray flattening with the back of a spoon. Bake for 15 minutes (starts to turn golden brown). Let it cool slightly while preparing the filling.

Time for the filling! Lower oven to 140 (fan forced). Put butter & sugar in a saucepan over medium low heat. Once butter has melted mix it with a whisk then let it come to a simmer,

Once it starts to bubble add in the sweetened condensed milk & whisk for 5 minutes (usually at this point it starts to have some big bubbles coming up). Continue whisking for 1 more minute once this happens.

Pour mixture into the pan & spread it evenly by tilting. Put it into the oven for 15 minutes.

Once done let it cool on the bench for 20 minutes then refrigerate for 30 minutes.

Time for the top! Break the chocolate up & place it in a microwave safe bowl along with the oil. Microwave it for 30 seconds at a time for approx 2 mins giving it a mix each time.

Pour the chocolate over the caramel & use a spatula to evenly spread. Place in the fridge for 1 hour 30 minutes until set.

Take out for 5 minutes before cutting. Enjoy!
