- 60grams unsalted butter, chopped
- 200grams sweetened condensed milk
- 1tablespoons golden syrup
- 2 cups plain flour
- 1/4 cup caster sugar
- 125grams unsalted butter, melted
- 1teaspoons vanilla bean paste
- 1/2 cup mixed nuts, roughly chopped (see Tip)ingredient tipTipI used 80g macadamia nuts for my topping. You can use your favourite type of nut or leave them out all together. This slice is also lovely using walnuts or salted peanuts. You can swap the nuts for chocolate chips instead, if you prefer. Enjoy with a cup of coffee or tea for an afternoon treat.

Brighten up your afternoon cuppa or weekend picnic with this easy and decadent caramel slice recipe with a twist of shortbread from Jacqui in QLD.
Method
Step 1 of 4
Preheat oven to 160°C/140°C fan-forced. Grease a 20 x 30cm (3cm deep) slice pan. Line with baking paper.
Step 2 of 4
Stir butter, condensed milk and syrup in a small saucepan over low heat until melted. Set aside to cool.
Step 3 of 4
Combine flour and sugar in a bowl. Add melted butter and vanilla, and stir until combined and a stiff dough forms. Press two-thirds of the dough into pan, reserving remainder (if it’s a warm day, keep the remainder in the fridge until needed).
Step 4 of 4
Pour milk mixture over base and smooth top. Scatter over nuts. Crumble reserved dough over nuts. Bake for 40 minutes or until edges turn a rich caramel colour. Cool completely before cutting into 24 squares.
