  • 180grams dried pitted dates
  • 150grams Anzac biscuits (crumbled)
  • 25grams butter (melted)
  • 2teaspoons vanilla bean paste
  • 1/3 cup pure cream
  • 2tablespoons golden syrup
  • 2tablespoons almond spread
  • 150grams dark chocolate (chopped)
  • 1teaspoons salt flakes
  • 1tablespoons coconut oil

Method

Step 1 of 4

Line base and sides of an 18.5cm square pan with baking paper. Process biscuit, butter and 1 tbs syrup in a food processor until biscuit is finely chopped and combined. Line base of pan with mixture, using back of a spoon to flatten. Chill.

Step 2 of 4

Process dates, spread, oil, vanilla, remaining syrup and 1/4 cup boiled water in a food processor until smooth. Pour mixture over biscuit base. Freeze for 30 minutes or until firm.

Step 3 of 4

Place chocolate and cream in a heatproof bowl set over a saucepan of simmering water (ensuring bowl doesn’t touch water) and stir until melted and combined.

Step 4 of 4

Pour chocolate mixture over date layer, spreading evenly with a palette knife or back of a spoon. Scatter over salt flakes and freeze for 3 hours or until firm. Use a hot knife to cut slice into 20 pieces, then store in the freezer until ready to serve.
