  • 8 pitted dates (chopped)
  • 1 cup self-raising flour
  • 1tablespoons shredded coconut
  • 1tablespoons extra virgin olive oil
  • 1tablespoons honey
  • 1 cup rolled oats
  • dark chocolate (to decorate)
  • 1/2 cup brown sugar
  • 2tablespoons almond meal
  • 1/2 cup coconut oil
  • 1 cup raw cashews

Method

Step 1 of 4

Preheat oven to 180°C/160°C fan-forced. Line baking tray with baking paper.

Step 2 of 4

Process cashews, oats, dates and sugar in a food processor until mixture is a chunky consistency. Add honey and oils, then pulse to combine. Transfer to a bowl and stir through almond meal, coconut and flour.

Step 3 of 4

Place mixture in tray and bake for 20 minutes or until golden. Remove and allow to cool completely.

Step 4 of 4

Drizzle chocolate over slice, then refrigerate until chocolate sets. Serve.
