Base
- 1 1/4 cup plain flour (sifted)
- 1tablespoons cornflour
- 125grams unsalted butter (melted)
- 1/3 cup brown sugar
Filling
- 1/3 cup plain flour
- 125grams fresh blueberries icing sugar mixture (to serve)
- 1teaspoons finely grated lemon zest
- 2/3 cup lemon juice
- 4 free range eggs
- 1 cup caster sugar

Method
Step 1 of 3
Preheat oven to 180°C/160°C fan-forced. Lightly grease a 271/2 x 171/2cm (31/2cm deep) slice pan, then line with baking paper, extending 2cm above pan edges.

To make the base, place butter, sugar, flour and cornflour in a bowl, stirring to combine. Press mixture into pan and bake for 18 minutes or until light golden. Allow to cool completely.
Step 3 of 3
To make the filling, whisk together eggs, zest, flour and sugar until smooth. Add lemon juice, stirring to combine. Pour filling over slice base, then top with half the blueberries. Bake for 30 minutes or until just set. Cool completely in pan. Cut into squares, dust with icing sugar, then serve with remaining blueberries.
