For the base
  • 110grams plain flour, keep 20g for filling
  • 25grams caster sugar
  • 25grams crunchy nut cork flakes
  • 70grams unsalted butter
  • 1tablespoons oat milk
For the filling
  • 1 egg, free range
  • 1/3 cup lemon juice
  • 100grams caster sugar
  • 1 handful blueberries (for garnish)
For the garnish
  • 1 lemon, 2 tbs zested
  • 2tablespoons icing sugar

Description

Crunchy and tangy sweet snacks.

Method

Step 1 of 6

Pre-heat the oven to 180°C/160°C fan-forced and lightly butter a 10cm baking tin.

Step 2 of 6

In a mixing bowl, combine all of your ingredients, incrementally adding 90g of the flour.

Step 3 of 6

Place the mixture at the base of your baking tin, press down hard and bake in the oven for 20 minutes.

Step 4 of 6

While the base is baking, in a bread or loaf tin, combine the filling ingredients with the 20g of flour and combine fully.

Step 5 of 6

Remove the base from the oven and fill up with the filling ingredients and bake for a further 15 minutes.

Step 6 of 6

Once, cooked, allow to cool and garnish with icing sugar and lemon zest before serving.
