- 250grams apples, peeled and grated

Description
These simple apple muffins are naturally sweetened and deliciously spiced.
Method
Step 1 of 4
Pre-heat the oven to 210°C/190°C fan-forced and line a muffin pan with 12 paper cases.
Step 2 of 4
Whisk the flour, baking powder, baking soda, cinnamon, mixed spice and pecans together in a large bowl. Mix the wet ingredients together in a bowl, pour into the dry ingredients and gently mix to combine.
Step 3 of 4
Fold in the grated apple. Spoon the batter into the muffin cases, filling each to the top and bake for 5 minutes, reduce the heat to 170°C/150°C fan-forced and bake for 18 minutes until a skewer comes out clean.
Step 4 of 4
Cool for 5 minutes in the muffin pan and transfer to a wire rack to cool completely.
