  • 25grams pumpkin seeds
  • 30grams puffed rice
  • 40grams dried apricots, finely chopped
  • 100grams almond butter, crunchy

  • 1teaspoons vanilla extract

Description

These easy oat and nut bars are crunchy and nutritious, a perfect breakfast or lunchbox filler.

Method

Step 1 of 4

Heat a dry pan on medium heat and toast the oats for 2-3 minutes, tossing often to ensure they don't burn. Tip into a food processor with the dried dates, figs, cinnamon, vanilla and orange zest.

Step 2 of 4

Tip the toasted oats into a large bowl with the dates, flaked almonds, pumpkin seeds, puffed rice and apricots and mix well.

Step 3 of 4

Heat the almond butter, honey and vanilla in a small saucepan until runny. Pour this mix over the fruit and nuts and mix well to form a dough.

Step 4 of 4

Line a baking tin with parchment paper and spoon the mix in, pressing down with the back of a spoon to form an even layer. Place in the freezer for 30 minutes to set, then slice into 12 bars.
