- 1/4teaspoons baking powder
- 1/4teaspoons bicarbonate soda
- 50grams sugar
- 1 medium egg, free range
- 110grams butter
- 30grams peanut butter
- 50grams chocolate chips

Description
Silky peanut butter and tropical coconut make for a surprisingly fresh take on the cookie.
Method
Step 1 of 6
In a mixing bowl, combine the butter with the sugar until its combined fully. Crack the egg into the mix and combine fully.

Incremently sieve in the flour, allspice, baking powder and baking soda into the bowl while mixing.
Step 3 of 6
Finally add the chocolate chips, coconut and peanut butter and once its combined, allow to set in the fridge for 1 hour.
Step 4 of 6
Pre-heat the oven to 160°C/140°C fan-forced. Now seperate the dough mix into 10 balls and flatten into your desired cookie shape.
Step 5 of 6
Place the cookies on some baking paper, on a baking tray and bake for 20 minutes.

Check the cookies while cooking as some people may prefer a soft center cookie and others a more crunch so adjust cooking times where needed.
