- 100grams ground almond
- 50grams ground macadamia
- 1 medium egg, egg white only needed
- 1 lemon, 1 tbs zest
- 2teaspoons allspice
- 100grams icing sugar
- 1teaspoons lemon juice
Description
These festive crunchy almond cookie are a German classic.
Method
Step 1 of 7
Pre-heat the oven to 160°C/140°C fan-forced. In a mixing bowl, beat the egg white and lemon juice until peaks appear.
Step 2 of 7
Incremently add the icing sugar and beat until peaks appear again. Take out about one quarter of the mix and set aside for the moment.
Step 3 of 7
Add the rest of the ingredients to the mixer to combine fully and allow to set for 10 minutes.
Step 4 of 7
Roll out your dough and shape into as many star shapes as possible, you should be able to get about 10.
Step 5 of 7
Prepare a baking tray with some baking paper and place the starts on it.
Step 6 of 7
Now with the remaining meringue over the top of the stars evenly.
Step 7 of 7
Bake in the oven for 15 minutes or until the meringue on top starts to brown nicely.
