Description

These fried khrustyky cookies are brimming with vanilla flavour and are a staple at Christmas in Ukraine.

Method

Step 1 of 4

Beat the eggs and yolks together in a large bowl with a handheld electric mixer until light and fluffy. Beat in the sugar, cream and vanilla. Stir in half of the flour to form a dough. 

Step 2 of 4

Tip the dough onto a floured work surface and knead well, adding the rest of the flour gradually, incorporating it as you knead. Place the dough in a bowl, cover and chill in the fridge for 30 minutes.

Step 3 of 4

Tip the dough onto a lightly floured work surface and roll out into a thin rectangle. Cut the dough into long strips. Cut each strip in half and cut a slit in each half. Pull the end through the slit to form a knot.

Step 4 of 4

Heat the oil to 170°C in a large pan or deep fat fryer. Cook the dough for 1 minute or until golden brown and doubled in size. Drain on kitchen paper and leave to cool. Dust the cookies with icing sugar and serve.
