  • 1/2teaspoons baking powder
  • 1 1/3 cup plain flour
  • 1/2 cup icing sugar, sifted
  • 125grams unsalted butter, softened
  • 2teaspoons vanilla extract
  • 500grams cherries, pitted, chopped
  • 1 lemon, juiced 1 tsp
  • 2tablespoons maple syrup
  • 1/4 cup rice flour
  • 2tablespoons white chia seeds
  • 1 free range egg

Step 1 of 5

To make the jam, place cherries, maple syrup and lemon juice in a medium saucepan over medium-high heat. Simmer for 15 minutes, stirring occasionally, or until cherries are very soft. Remove from heat and mash or purée with a stick blender. Stir in chia seeds and set aside for 15 minutes to cool and thicken.

Meanwhile, use an electric mixer to beat butter and icing sugar together in a large bowl until pale and creamy. Beat in egg and vanilla until smooth. Sift flours and baking powder together and stir into butter mixture.

Preheat oven to 160°C. Line 2 baking trays with baking paper. Roll dough to 4mm thick. Using a 4.5cm scalloped cutter, cut out biscuits and place on trays. Using a small 2cm star cutter, cut stars from centres of half the biscuits.

Bake biscuits for 15 minutes or until pale golden. Cool completely on wire racks.

Step 5 of 5

Spread each whole biscuit with 1 tsp jam and sandwich together with a star biscuit. Dust with extra icing sugar to serve.
