Instruction tip
The icing could also be coloured with red food colouring. Add colouring, a drop at a time to achieve desired colour. You can also use cut-out shapes to decorate.

Method

Step 1 of 3

Cut dark fruit cake into 4 even pieces. Heat apricot jam in microwave on HIGH for 1 minute. Rub jam through a fine sieve then brush over top and sides of each cake. Lightly dust a flat surface and rolling pin with pure icing sugar.

Step 2 of 3

Divide white ready-made icing into five even portions. Roll out one portion until 4mm thick. Cover cake and trim off excess. Repeat with remaining icing and cakes. Divide remaining icing in half and add drops of green food colouring to one half.

Step 3 of 3

Roll out both until 4mm thick. Cut into strips long enough to lay over each cake. Brush whisked egg white onto one side and press onto cake as shown. Serve.
