  • 2-4 drops red gel food colour

Method

Step 1 of 4

Preheat oven to 110°C. Line 2 baking trays with baking paper. Fit a piping bag with a star nozzle.

Step 2 of 4

Beat the egg whites with cream of tartar using a mixer until soft peaks form. Gradually add in the sugar and continue beating for 10 minutes until thick, glossy and the peaks are stiff. Beat in essence, if desired.

Step 3 of 4

Using a small clean paintbrush, add stripes of red food gel to the inside of the piping bag. Fill bag with meringue mixture. Pipe small dollops of meringue on trays, pulling the bag straight up to form little peaks. You can also make candy cane shapes, if you like.

Step 4 of 4

Bake for 40 minutes, then turn off the oven, prop the door open and leave meringues to cool slowly inside the oven for 1 hour.
