  • 4 medium eggs, separated
  • 1 pinch salt
  • 100grams caster sugar
  • 1teaspoons baking powder
  • 125grams flour
  • 50grams pecans, crushed
  • 120grams butter
  • 200grams icing sugar, keep 40g for garnish
  • 1teaspoons cinnamon
  • 3/4 cup whipped cream, whipped
  • 4tablespoons cocoa powder, half for sponge and half for icing

Description

A traditional festive Yule log with cream and chocolate.

Method

Step 1 of 7

Pre-heat the oven to 200°C/180°C fan-forced. In a mixing bowl, beat the egg whites with the salt until peaks form.

Step 2 of 7

Introduce the caster sugar and half the cocoa slowly until peaks form again.

Step 3 of 7

Beat the egg yolks and mix then into the bowl. Incremently add the flour and baking powder and mix until combined fully.

Prepare a deep baking tray with some babking paper and bake the dough for 10 minutes and then remove from the oven to cool.

While this is cooking, prepare the icing by mixing the butter, icing and cinnamon together well.

In a seperate bowl, whip the cream and combine with the crushed pecans.

Step 7 of 7

Now layer the nutty cream over the sponge and roll over. Once rolled, cover with the icing mix, pipe or spreadh the butter cream and garnish with the pecans.
