  • 750milliliter vanilla ice cream (good quality)
  • 1 cup crumbled Christmas cake
  • 1tablespoons brandy
  • 150grams white chocolate melts

Instruction tip
These ice-cream puddings can be prepared well in advance of time. Store them in the freezer until you're ready to serve with white chocolate.

Method

Step 1 of 3

Grease 6 x 2/3 cups capacity small bowls. Line with plastic wrap. Slightly soften ice-cream. Working quickly, gently stir in crumbled Christmas cake or Christmas pudding and brandy or your favourite liqueur. Spoon into prepared bowls. Cover tops with plastic wrap and freeze for at least a few hours or overnight.

Step 2 of 3

When ready to serve, melt white chocolate melts in a heatproof bowl over simmering water until smooth. Remove bowl with chocolate from heat and cool slightly.

Step 3 of 3

Dip pudding bowls into the hot water and unmould onto serving plates. Spoon over melted white chocolate and decorate with a sprig of holly.
