- 1 3/4 cup plain flour
- 2teaspoons vanilla essence
- 1/2teaspoons salt
- 2tablespoons icing sugar (to dust)
- 250grams butter, chopped
- 1 cup polenta
- 1 egg
- 3/4 cup caster sugar

Method
Step 1 of 3
Process flour, polenta, sugar and salt together in a food processor. Add butter. Process until combined and like fine breadcrumbs. Whisk egg with vanilla, then add to mixture in processor and process to combine.
Step 2 of 3
Transfer mixture to a lightly floured surface and knead gently until it comes together and is smooth. Divide into three portions. Wrap in plastic and chill for 1 hour.
Step 3 of 3
Preheat oven to 180°C. Line two baking trays with baking paper. Roll out each portion until 5mm thick. Cut using Christmas-shaped cutters – we used angels and stars. Bake for about 15 minutes, depending on size, until pale golden. Cool and dust with icing sugar.
