  • 1/3 cup hazelnuts (skinless )

  • 200grams Griffins Malt Biscuits
  • 125grams butter, softened
  • 1/2 cup caster sugar
  • 2teaspoons Queen Natural Vanilla Extract
  • 1/3 cup milk (see Tip)
  • 2tablespoons cocoa powder
  • 200grams dark chocolate, melted, cooled
  • 2tablespoons icing sugar

Description

Christmas gifts baked with love are a great and affordable way to spread festive cheer. These unique and festive delicious chocolate and nut packed treats will impress guests and delight tastebuds.

Method

Step 1 of 5

Preheat oven to 180C/160C fan-forced. Line a baking tray with baking paper. Spread nuts over prepared tray. Bake for 6-8 minutes or until golden. Set aside to cool. Chop nuts.

Step 2 of 5

Place biscuits in a food processor. Process until finely chopped, being careful not to process too fine.

Step 3 of 5

Using an electric mixer, beat butter, caster sugar, vanilla, ginger, mixed spice and cinnamon until pale and creamy. Add milk. Beat until combined. Add cocoa. Beat until combined. Add in chocolate and biscuit crumbs. Stir until coated and well combined. Stir in nuts. Refrigerate for 15 to 20 minutes or until mixture is slightly firmer.

Step 4 of 5

Divide mixture between 2 large pieces of plastic wrap. Using plastic as a guide, firmly roll each portion to form a 4cm x 25cm smooth log. Twist ends of plastic to seal. Refrigerate for at least 6 hours or overnight, until firm.

Step 5 of 5

Remove and discard plastic wrap. Dust roll with icing sugar, rubbing all over to coat. Wrap in baking paper. Store log in an airtight container in the fridge for up to 1 week. Stand at room temperature for 15 minutes before slicing and serving.
