Chocolate brownie slice
  • 1/2teaspoons Mckenzie's Baking Powder
  • 185grams White Wings Plain Flour
  • 170grams CSR Brown Sugar
  • 170grams CSR Caster Sugar
  • 225grams Nestle Plaistowe Dark Cooking Chocolate , broken into pieces
  • 225grams margarine (or butter), melted
  • 1teaspoons Queen Peppermint Extract
  • 1 free-range egg
  • 3 free-range egg
  • 35grams Nestle Bakers Choice Cocoa
  • 1/4teaspoons salt
Creamy vanilla frosting
  • 1/4 cup thickened cream
  • 1teaspoons Queen Natural Vanilla Extract
  • 4 cup CSR soft icing mixture
  • 12 peppermint candy canes
Mason jar (for assembling brownie jar)

Method

Step 1 of 13

Brownies: Preheat oven to 180°C (fan-forced) and line a 20cm square deep slice tin with baking paper. In a large bowl, combine margarine, sugars and salt with an electric mixer until smooth.

Add peppermint extract, eggs and egg yolk one at a time, mix on medium speed until batter is pale.

Sift flour, cocoa powder and baking powder into the batter and half of the chocolate pieces.

Step 4 of 13

Stir until just combined, then add the remaining chocolate.

Spoon batter into tin and bake for 40 minutes. Remove from oven and allow to cool.

Chill in the refrigerator.

Creamy vanilla frosting: Beat the margarine with an electric mixer on low until creamy.

Slowly add icing mixture. Once combined, increase to medium speed and add vanilla essence then slowly add cream.

Beat until thick and creamy.

Transfer to a piping bag with medium star nozzle.

Mason jar (to assemble): Divide brownie into 16 squares.

Place 1 brownie piece in each jar, pipe a rosette of frosting and sprinkle with crushed candy cane.

Step 13 of 13

Repeat all layers and close jar with lid. Tie remaining candy canes to outside of jars with twine.
