  • 250grams Orchard white icing
  • food colouring (optional)
  • 1/2 cup plain flour
  • 1/2 cup self-raising flour
  • 1/2teaspoons mixed spice
  • 500grams dried mixed fruit
  • 125grams butter
  • 1 orange, 1 tsp rind finely grated
  • 2 eggs, whisked
  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup slivered almonds
  • 1/3 cup fresh orange juice

Description

Discover our delicious Christmas muffins! Made with a blend of festive spices and dried fruit, these muffins are sure to get you in the holiday spirit.

Method

Step 1 of 4

Preheat oven to 170°C. Line a 12-hole muffin pan with paper cases.

Step 2 of 4

Beat butter, sugar and orange rind in a bowl until pale and creamy. Gradually add egg, beating well after each addition.

Step 3 of 4

Stir in fruit, almond and orange juice. Sift together flours and spice and fold into mixture. Divide between muffin holes and smooth tops. Bake for 30 minutes or until firm to touch. Set aside to cool.

Step 4 of 4

To decorate, colour icing if desired. Roll out until 3mm thick. Use cutters to cut out shapes and place on top of cakes.
