  • 250grams plain flour, sifted
  • 175grams unsalted butter, cut into small pieces
  • 1 orange, grated rind
  • 1/2teaspoons mixed spice
  • 75grams caster sugar
  • 2teaspoons water, cold
  • 2teaspoons icing sugar (to serve)
  • 1teaspoons cocoa powder (to serve)

Method

Step 1 of 4

Place the flour in a bowl, add the butter and rub in with the finger tips until the mixture resembles fine breadcrumbs. Stir in the remaining ingredients with the measurement water and mix to form a dough.

Step 2 of 4

Roll out the dough on a lightly floured surface to a thickness of 2.5 mm. Using a 1.5 cm plain cutter, cut out about 80 rounds.

Step 3 of 4

Place the rounds on nonstick baking sheets and bake in a preheated oven, 200°C for 10-12 minutes until golden. Carefully transfer to a wire rack to cool.

Step 4 of 4

Mix together the icing sugar and cocoa powder and dust a little over the shortbreads before serving.
