- 500grams currants
- 500grams sultanas
- 1 cup sweet sherry
- 1 large orange, zested and juiced
- 250grams butter
- 1 cup dark brown sugar, firmly packed
- 3teaspoons vanilla extract
- 4 large eggs
- 1/2 cup treacle
- 1 1/2 cups plain flour
- 1/2 cup self raising flour
- 3teaspoons mixed spice
- 180grams dark chocolate, grated
- 150grams walnuts, chopped
- 1kilograms ready to roll fondant icing (if desired for decoration)
- 1/4 cup apricot jam (to stick icing to cake)
- festive cake decorations (of your choice)
Description
A great Christmas cake that keeps well.
Method
Step 1 of 6
In a large bowl put sultanas, currants, sherry, zest and juice of orange cover with 2 layers of cling wrap leave at least 2 hrs overnight is better.
Step 2 of 6
Preheat oven 160 c grease cake pan I usually make into 1 - 20cm tin and 2 - 10cm tins ( lined with baking paper and greased well ) as I give a gifts.
Step 3 of 6
Put butter and sugar into mixer with vanilla beat on high until light and fluffy. Add eggs 1 at a time beating well until combined. Add treacle beat til well combined.
Step 4 of 6
Add butter mixture to soaked fruit stir until combined. Sift flour and spices until combined Stir in chocolate and walnuts until combined.
Step 5 of 6
Spoon into lined cake tins spread tops smooth with the back of a wet spoon. Place cakes in oven bake for 60 mins or until cooked when skewer comes out clean. Drizzle over 1/2 cup extra sherry over hot cakes allow to cool in tins.
Step 6 of 6
You can leave uniced or cover with fondant icing. Warm 1/4 cup apricot jam over the cake before putting on icing this acts as a glue for icing. You can also add cake decorations, available at Woolies. These always make a great gift wrapped in cellophane paper with a ribbon around it.
